Directions

Preheat oven to 450 degrees F. Empty corn bread mix into bowl. Add 1 fresh egg and 1 cup milk. Stir until just blended. Bake in well greased hot 8 or 9 inch pan or skillet 15 to 20 minutes. Serve piping hot with butter. Hints: Batter may be lumpy; this does not affect results. For extra crisp corn bread, melt 1 or 2 tablespoons shortening or bacon drippings in pan, before adding batter. Heat pan so that batter sizzles when poured into it. Variations: Add either 1/2 cup of chopped fired bacon, ham, chipped beef or crackling to batter.
