Basic Recipe Directions: 3-4 pancakes = 1/3 cup mix, 1/4 cup water; 6-8 pancakes = 1 cup mix, 3/4 cup water; 12-16 pancakes = 2 cups mix, 1-1/2 cups water; 20-24 pancakes = 3 cups mix, 2-1/4 cups water (For thinner pancakes, use a little more water. For thicker pancakes, use a little less water). Heat griddle or large skillet (if electric, heat to 375 degrees). Grease lightly with oil. Griddle is ready when small drops of water sizzle and disappear almost immediately. (Pancakes will stick if griddle is too cool). Combine pancake mix and water in bowl and stir with a wire whisk until large lumps disappear. (Batter will be lumpy. Over mixing may toughen pancakes). Pour a scant 1/4 cup batter for each pancake onto lightly greased pre-heated griddle. Cook 1 to 1-1/2 minutes turning when edges look cooked and bubbles begin to break on the surface. Continue to cook 1 to 1-1/2 minutes or until golden brown. Waffle Directions: Heat waffle iron. In a large bowl, combine 2 cups pancake mix, 1-1/2 cups water, 1/3 cup oil. Stir until large lumps disappear. Allow batter to rest 4 to 5 minutes, before baking. Pour desired amount of batter into lightly greased waffle iron until steaming stops and waffle is golden brown. Makes twelve 4-inch waffles.
