To-Jo Dried Chanterelle Mushrooms

Directions

Never eat dried mushrooms without cooking: Easy to reconstitute: soak for 30 minutes in warm water, stock or wine. Remove mushrooms from soaking liquid, then rinse gently under cold water and pat dry. Soaking liquid may be strained through a coffee filter and added to recipe to intensify mushroom flavor. Both reconstituted mushrooms and soaking liquid must be fully cooked to a minimum temperature of 165 degrees F. before serving.
