What you need: 1 package Lettuce Wrap Seasoning (1.25 oz., 35 grams), 1¼ cup of water, 1 Tbsp of Soy Sauce, 1½ tsp of sugar, white or brown, 1½ lbs finely diced chicken or ground chicken, 2/3 cup canned water chestnuts, drained and finely diced, 2/3 cup finely diced fresh mushrooms or canned mushrooms, drained, 1/3 cup sliced green onions (optional) 1 head of Iceberg lettuce, cooked white or brown rice. Preparations: 1. In a 2 qt glass bowl, blend seasoning, water, soy sauce and sugar. Stir in remaining ingredients except lettuce & rice. Cover & refrigerate 20 min. stirring once. 2. In an oiled large skillet, sauté chicken marinade mixture on high heat for 1 min. Reduce heat to medium, cook 7 min. stirring occasionally. Remove from heat and keep warm. 3. Cut a head of iceberg lettuce in half, wash and drain well. Separate whole lettuce leaves. 4. Fill lettuce leaf with cooked rice & meat mixture. 5. Serve topped with soy sauce, hot chili sauce and/or Chinese hot mustard, as desired. Vegetarian version: Substitute 16 oz (1 lb) diced tofu for chicken. Makes approximately 8 to 10 wraps.
