To prepare: In medium saucepan, bring 1-1/2. Cups water to boil. Add I cup rice, 1 tbsp. Shortening or oil, and 1/2 tsp. Salt. Reduce heat to low and cook for 15 minutes, covering pan after 10 minutes. Let stand, covered, for 5 minutes. Yield: 1 cup uncooked rice makes 3 cups cooked rice. To Serve Iberia Pearl Rice is commonly used to make Paella. It also makes a tasty and healthy side dish with any meal, and tastes great when mixed with chicken or pigeon peas. To retain vitamins, do not rinse before or drain after cooking.
