Keep refrigerated Method: Melt butter. Heat milk over medium heat and allow to cool 10 minutes. Whisk eggs, flour, sugar and salt together, slowly add the hot milk, melted butter and extract. Melt a little butter in a skillet, over medium heat Add about 3 Tbsp of the batter to the pan and swirl to cover the bottom of the pan. Cook until the bottom of the crepe is golden 1-2 minutes. Loosen edges with a spatula. Flip and cook for another minute. Once crepes are made, fill will apple filling. Makes about 15 crepes.
