Safe Handling Instructions: This product was prepared from inspected and passed meat and/or poultry. Keep refrigerated or frozen. Thaw in refrigerator or microwave. Keep raw meat and poultry separate from other foods. Wash working surfaces (including cutting boards), utensils, and hands after touching raw meat or poultry. Cook thoroughly. Keep hot foods hot. Refrigerate leftovers immediately or discard. Bake/Roast Preheat the oven to 425 degrees. Place leg, flat side down, on rack in shallow roasting pan. In a small bowl mix together your favourite lamb seasonings. Rub all over the outside of the leg. Roast, uncovered, 15 minutes. Reduce heat to 375 degrees F and continue roasting for 20 minutes per pound of meat or until the internal temperature reaches 155 degrees F at its thickest part, away from bone. Let rest covered in foil, 5 to 10 minutes before carving.
