Directions

Recipe for 4 people: 17.6 oz of chickpeas, 3 bay leaves, 1 cup extra virgin olive oil, 2 cloves of garlic, 1 sprig of rosemary, 2 potatoes, salt, pepper and 1 bunch of chopped scallions. Directions: Soak the chickpeas in cold water overnight. Drain and cook in lightly salted water with 2 cloves of garlic, rosemary, bay leaves and water for approx. 30 - 40 min. or until tender. Separately boil 2 peeled potatoes until soft. Drain the cooked chickpeas and combine them with the slightly mashed potatoes. Season with salt and pepper, and garnish with extra virgin olive oil and chopped scallions.
