Peapod Meal Kit: Autentico Sicilian Pasta Alla Norma


 

Directions

Cookware - 1 Saucepan, 1 Pot. Cooking - 13 Minutes. Makes - 4 Servings. Step 1: Fill a large pot with 4 quarts of water and bring to a boil. Add 1 tablespoon salt and the pasta to the boiling water and cook 8 minutes. Step 2: Meanwhile, empty the jar of Norma Sauce into a large skillet and place over low heat. Add approximately ½ cup of the water in which the pasta is cooking to the sauce, stirring to combine. Chiffonade the basil and set aside. When the pasta has cooked for 8 minutes, increase the heat under the sauce and add an additional ½ cup of pasta water. TIP: Chiffonade is a cooking technique for cutting vegetable leaves into long, thin, fine strips, shreds or ribbons. To Chiffonade fresh basil, gather the leaves into a stack, roll them, then slice lengthwise into thin strips. Step 3: Drain the pasta, reserving some of the pasta water, and transfer the pasta to the skillet. Cook for an additional 3 minutes, adding some of the reserved pasta water if the sauce becomes too dry. Turn off the heat and drizzle with 2 tablespoons of olive oil. Finish the pasta by topping it with the sliced basil and shredded Ricotta Salata cheese.
