Broiling: Broil on rack of broiler pan so surface of beef is 3 to 4 inches from heat for 1-inch steaks or 2 to 3 inches from heat for 3/4-inch steaks or 1-inch tenderloin, Broil to an internal temperature of 145 degrees F - 160 degrees F for medium-rare to medium doneness, turning once. Keep refrigerated.
