Wash working surfaces (including cutting boards), utensils, and hands after touching raw/meat or poultry. Cook thoroughly. Keep hot foods hot. Refrigerate leftovers immediately or discard. Marinating: Marinate in tenderizing marinade that contains salsa, Italian dressing or lemon juice 30 minutes to 1 hour. Grilling: Grill, uncovered, over medium ash-covered coals to an internal temperature of 145 degrees F – 160degrees F for medium-rare to medium doneness. Broiling: Broil on rack of broiler pan so surface of beef is 3 to 4 inches from heat for 1-inch steaks or 2 to 3 inches from heat for 3/4 inch steaks or 1-inch tenderloin. Broil to an internal temperature of 145 degrees F – 160 degrees F for medium-rare to medium doneness, turning once. Keep refrigerated.
