Directions

You will need: 2 medium all-purpose potatoes, peeled and cut into 1/2-inch cubes (about 3 cups). 1 tbsp. oil. 1 medium onion, finely chopped. 1 green chile pepper, such as serrano, seeded and finely chopped (optional). 1 pkg saag aloo seasoning mix. 1 lb. baby spinach leaves. 1/2 cup light or heavy cream. Directions: Prep time: 10 minutes. Cook time: 30 minutes. 1. Place potatoes in medium saucepan. Cover with water. Bring to boil. Reduce heat to low; cover and simmer 8 to 10 minutes or until potatoes are fork tender. Drain potatoes. Set aside. 2. Heat oil in large skillet on medium heat. Add onion, chile and seasoning mix; cook and stir 3 minutes or until translucent. Add spinach in batches; cook and stir 2 minutes after each addition until spinach is fully wilted. 3. Stir in potatoes and cream until well blended. Bring to boil. Reduce heat to low; simmer 10 minutes, stirring occasionally. Makes 8 servings.
