Directions

Preparation: Lightly grease pizza pan with Crisco. Remove dough sheet from freezer. Place dough sheet in greased pizza pan. Wrap dough filled pan with plastic wrap and place on rack in cooler until ready to use. Remove dough from cooler 2 hours before use and place in warm location. Proof dough until it reaches the top of the pan. Bake pizza dough in oven to 50% baked according to oven type instructions below. Remove par baked shell from pan (it will still be light in color) and place on cooling screen. Place shell in cooler. Enter product date and time on cooling log. Cool shell to below 40 degrees. Remove cooled shell from cooler. Place 1 ladle (6 oz) of pizza sauce in center of dough and spread out to cover the surface entire pizza. Open 1-5lb. bag of cheese and dump it into a 4 inch 1/2 hotel pan and place into the Pizza Make station. Fluff cheese so there are no big clumps of cheese in the hotel pan. Using the 16 oz. coffee cup- fill it with the loose shredded mozzarella cheese to the top. Do Not over fill the cup. Do Not use any other vessel to measure cheese. Only use the 16 oz. hot coffee cup to measure the cheese, spread the cheese evenly over the top of the pizza utilizing corner to corner standards Bake: Proofing/Baking/Cooking/Cooling/Frying/Finishing Instructions: Brick oven-bake at 525 degrees for 4-5 minutes. Belt oven- bake at 495 degrees for 2-3 minutes. Convention oven- bake at 400 degrees for 3-4 minutes. Packaging & Display Instructions (Refrigerated / Non-refrigerated): Pizza will be in an aluminum pan. Place clear lid in base. Place sticker on lower right corner. UPC tag goes on the bottom of pan. Merchandise cold case. Place in self service case at 40 degrees.
