Simmer: What's Inside: Bean & Vegetable Blend (Dried: Black Beans, Corn, Red Bell Peppers, Onions), White Rice, Chipotle Sauce.What you need: 1 tsp. Oil, ½ lb. Chicken, 1½ cups Water.Optional Garnish: 1 bunch cilantro, 1 Avocado.1. Prep Ingredients: Chop 1 tbsp. cilantro. Cut avocado in half, lengthwise; remove seed and peel. Chop into small pieces. Cut chicken into bite-sized pieces.2. Stir It Up: Heat oil in medium skillet on medium-high heat. Add chicken; cook and stir 5 to 6 min. or until evenly browned and cooked through (165°F). Remove from pan.3. Now We're Cooking: Return skillet to heat. Add Rice and 1-1/2 cups water. Bring to boil; cover. Reduce to simmer. Cook 3 min.4. All Together Now: Add Bean & Vegetable Blend to skillet. Cover and cook 16 min. more, adding chicken for final 4 min. (If water remains in skillet, remove cover and continue cooking until almost no water is left.)5. Flavor Time: Stir in Chipotle Sauce. Cook 2-3 min. more or until thickened and heated through.6. The Finishing Touch: Top with avocado and cilantro.
