Fish Soup: Preparation Time: 30 minutes. Cooking Time: 60 minutes. Ingredients: 1 sachet Caribbean sunshine fish soup mix. 2 lbs. small fish (scaled and cleaned). 2 medium Irish potatoes diced. 4 green bananas diced 1 carrot sliced. 1 sprig thyme - 1 sprig parsley. 1 teaspoon Caribbean sunshine granulated, escallion & allspice. 1 teaspoon Caribbean sunshine granulated onion. Caribbean sunshine scotch bonnet. Pepper sauce (to taste). Caribbean sunshine black pepper (to taste). Salt (to taste). Three quarts water two limes. Directions: Wash fish with limes and drain. Boil fish in water until fish falls off the bones. Pour the contents through a strainer and remove all bones. Add one sachet of Caribbean sunshine fish soup mix and the potatoes, bananas, and carrots to the strained water. Bring to a boil. Add the fish and remaining ingredients (except parsley). Let simmer on medium high heat for another 10 minutes or until fish and vegetables are completely cooked.Top with parsley and serve hot! Store in a cool dry place.
