Proofing/Baking/Cooking/Cooling/Frying/Finishing Instructions: Brick oven-bake at 525 degrees for 4-5 minutes. Belt oven-bake at 495 degrees for 2-3 minutes. Conventional oven-bake at 400 degrees for 3-4 minutes. Cooking Instructions: Remove lid from tray. Place tray with pizza into pre-heated 400 degrees oven. Cook for approximately 18-20 minutes or until cheese is completely melted and crust is browned. For crisper crust - cook for 10 minutes on pan, then remove from pan and place pizza directly on oven rack until cheese is completely melted and crust is browned (approx. 5-8 minutes additional on oven rack). Preparation: Lightly grease pizza pan with Crisco. Remove dough sheet horn freezer. Place dough sheet in greased pizza pan. Wrap dough filled pan with plastic wrap and place on rack in cooler until ready to use Remove dough from cooler 2 hours before use and place in warm location. Proof dough until it reaches the top of the pan. Bake pizza dough in oven to 50% baked according to oven type instructions below. Remove par baked shell from pan (it will still be light in color) and place on cooling screen. Place shell in cooler. Enter product date and time on cooling log. Cool shell to below 40 degrees. Remove cooled shell from cooler. Place 1 ladle (6 oz) of pizza sauce in center of dough and spread out to cover entire surface of the pizza. Open 1-5 1b. bag of cheese and dump it Into a 4 inch A hotel pan and place into the Pizza Make station. Fluff cheese so there are no big clumps of cheese in the hotel pan. Using the 16 oz. coffee cup- fill it with the loose shredded mozzarella cheese to the top. Do Not over fill the cup. On Not use any other vessel to measure cheese. Only use the 16 oz. hot coffee cup to measure the cheese, spread the cheese evenly over the top of the pizza utilizing comer to corner standards. Then place pepperoni evenly on pizza. Lay pepperoni on pizza in a B 5 arrangement. Do not microwave. Keep refrigerated until ready to bake. Packaging & Display Instructions (Refrigerated/Non-Refrigerated): Pizza will be in an aluminum pan. Place clean lid in base. Place sticker on lower right corner. UPC tag goes on the bottom of pan. Merchandise in cold case. Place in self service case at 40 degrees.
