One-pot, 20 minute meal. Ready in 20 mins. 4 Simple Steps: (1) Wash and dry all produce. In a medium bowl, toss together cabbage, vinegar, 1 tsp sugar, and a large drizzle of olive oil. Season with salt and pepper. In a small bowl, combine sour cream, a big pinch of salt, and hot sauce to taste. Stir in water 1 tsp at a time until mixture reaches a drizzling consistency. (2) Halve, peel, and dice onion. Heat a drizzle of oil in a large pan over medium-high heat. Add onion and cook, stirring, until just softened, 3-4 minutes. Tear pork into smaller pieces; add to pan along with another drizzle of oil. Season with salt, pepper, and Southwest Spice Cook, stirring, until pork is warmed through, 2-3 minutes. (Pulled pork is fully cooked when internal temperature reaches 160 degrees.) Stir in tomato paste until thoroughly combined. Stir in stock concentrate and 1/2 cup water. Bring to a boil, then reduce heat to low. Simmer until mixture is saucy, 2-3 minutes. Turn off heat. (3) Meanwhile, wrap tortillas in damp paper towels and microwave until warm and pliable, 30 seconds. (Alternatively, wrap tortillas in foil and warm in oven at 425 degrees for 5 minutes.). (4) Fill tortillas with as much pork mixture and slaw as you like. TIP: You may have extra pork mixture and slaw. Serve on the side! Drizzle tacos with crema and serve. Keep refrigerated.
