Safe Handling Instructions: This product was prepared from inspected and passed meat and/or poultry. Some food products may contain bacteria that could cause illness if the product is mishandled or cooked improperly. For your protection, follow these safe handling instructions. Keep refrigerated or frozen. Thaw in refrigerator or microwave. Keep raw meat and poultry separate from other foods. Wash working surfaces (including cutting boards), utensils and hands after touching raw meat or poultry. Cook thoroughly. Keep hot foods hot. Refrigerate leftovers immediately or discard. For food safety cook to 165 degrees. Cooking Directions: At Shady Brook Farms we take pride in producing the finest turkey for you and your family and are honored to be part of your meal. Just follow these steps for a juicy, flavorful turkey everyone’s going to remember. Thawing (Defrosting) Do not open bag until turkey is defrosted. Keep turkey cold. Do not thaw at room temperature. Place on tray in refrigerator for time shown in chart below based on weight. This turkey is brined for your convenience. For additional brining, reduce the salt in your recipe by half. Preparation: Preheat your oven to 325 degrees F. Remove giblet package underneath the nect skin area. Place giblets in the refrigerator to use later for gravy stock or stuffing, if desired. To remove legs from clamp, press each leg down and push it in toward the cavity, one at a time. Keep the clamp for use during roasting. It is made of nylon and safe for use up to 500 degrees F. Remove neck from body cavity. Place neck in the refrigerator with the giblets to use later. Tor gravy stock or stuffing, if desired. Trim away excess skin, if desired. Re-tuck legs into clamp. Clamp will not melt while cooking at temperatures below 500 degrees F. Your turkey is now ready to cook. Roasting: Place whole turkey, breast-side up, on roasting rack inside a shallow roasting pan. Brush turkey with melted butter, vegetable oil, or spray with cooking spray and season as desired. Roast at 325 degrees F according to the chart below. lf turkey becomes golden-brown before it IS fully cooked, cover with a loose tent or aluminium foil to prevent over-browning. Cut a hole in the foil to view the pop-up timer. For optimal eating experience, turkey is done e neck or experience, turkey is done when pop-up timer has popped and a meat thermometer, not touching any bone. Estimated Thawing & Roasting Time (For food safety always cook to minimum of 165 degrees F, and use a meat thermometer to check for proper doneness). Weight: 8-12 lbs. Refrigerator thawing time: 1 to 3 days. Roasting time at 325 degrees F: 2-3/4-3-1/4 hours. Weight: 12-16 lbs. Refrigerator thawing time: 3 to 4 days. Roasting time at 325 degrees F: 3-3-1/4 hours. Weight: 16-20. Refrigerator thawing time: 4 to 5 days. Roasting time at 325 degrees F: 3-3-3/4 hours. Weight: 20-24 lbs. Refrigerator thawing time: 5-6 days. Roasting time at 325 degrees F: 3-3/4-4-1/2 hours. Weight 24+lbs. Refrigerator thawing time: 6 to 7 days. Roasting time at 325 degrees F 4-1/2-5-1/4 hours. If optimal temperature is yet to be reached, continue to check temperature every 15-20 minutes until reached). Registers 170 degrees F in the deepest part of the breast and thickest part of the inner-thing (For food safety always cook to minimum of 165 degrees F, and use a meat thermometer to check for proper doneness). Remove from oven and allow the cooked turkey to stand for 20 to 30 minutes. This allows the juices to settle and makes carving easier. Other Cooking Methods & Additional Tips: we recommend conventional oven roasting, but your frozen Shady Brook Farms whole turkey is also delicious when grilled. Microwaving is not recommended. Follow your grill manufacturer’s instructions for grilling directions and cooking times. Keep frozen.
