Directions

1 lb. boneless chicken breasts or shredded pre-cooked rotisserie chicken. 8 flour tortillas*. Green Enchilada Sauce*. Diced Green Chiles*. Shredded Cheese-Cheddar or Mexican Blend. To prepare the filling: 1. Add 4 cups of cold water to a pot large enough to fit a single layer of 1lb. boneless chicken breasts*. Add chicken in single layer, add salt if desired, then place over medium heat until rolling boil. 2. Once water is at rolling boil, flip chicken breasts over and remove from heat, cover, and let sit for 10-15 minutes or until thoroughly cooked. Remove chicken and let sit for at least 5 min and shred while still warm. 3. Add 1 can of Ortega Diced Green Chiles to the shredded chicken (optional: add 1/2 cup shredded cheese) and mix thoroughly. To prepare the enchiladas: 1. Preheat oven to 375 degrees F and lightly grease a 9 by 13 baking dish. 2. Place 1 tortilla on a flat surface and add 1 tablespoon of Las Palmas Green Enchilada sauce from packet. Spread evenly on tortilla surface. 3. Add 1/2 cup of filling mixture to the center of tortilla. 4. Take one edge of tortilla and fold over filling. Continue rolling tortilla until the excess tortilla cannot be seen. 5. Carefully pick up and transfer enchilada into baking dish, seam side down. 6. Repeat steps 2-5 until all 8 enchiladas are made and placed in baking dish. 7. Top the enchiladas with the remaining Las Palmas Green Enchilada sauce packet, spreading the sauce evenly over top of all enchiladas. Top with cheese. 8. Bake 20 to 25 min until cheese is melted and enchiladas are hot. 9. Serve with cilantro, jalapenos, avocado, or lime slices if desired. Recommended additions: 1lb. of filling (shredded chicken recommended), shredded cheese, cilantro, jalapeno, avocado, lime, 9 by 13 inches casserole/baking dish. * Included in Dinner Kit. * Or 1lb. precooked rotisserie chicken, shred, and season for quick option.
