Oven: Ingredients: 1 Hatfield Frenched Pork Loin Rack Roast (thawed if previously frozen). 2 sticks (1 cup) unsalted butter, softened. 1 tsp fresh cracked black pepper. 1 tsp salt. Optional: additional seasonings of your choice. Directions: 1. Preheat oven to 450 degrees F. Lightly spray or grease a roasting pan. 2. Remove the pork rack from the refrigerator about 1 hour before cooking to allow it to come to room temperature. 3. In a small bowl, combine the softened butter, salt, black pepper, and any additional seasonings you prefer. 4. Pat the pork rack dry with paper towels. Evenly rub the butter mixture all over the pork, covering all sides. 5. Place the pork rack bone-side down in the prepared roasting pan. Roast in the preheated oven at 450 degrees F for 10 minutes. 6. Reduce oven temperature to 375 degrees F and continue roasting for approximately 1 hour and 30 minutes, or until the internal temperature reaches 145 degrees F at the thickest part of the meat. 7. Remove the pork from the oven and transfer it to a cutting board. Let it rest for 10 minutes before carving to allow the juices to redistribute. 8. Slice and serve with your favorite sides. Enjoy!
