Wash working surfaces (including cutting boards), utensils, and hands after touching raw meat or poultry. Cook thoroughly. Keep hot foods hot. Refrigerate leftovers immediately or discard. Cooking Instructions: Preparation: 1. Remove roast from bag, pat dry with a paper towel, and season as desired. Oven: 1. Preheat oven to 425 degrees F 2. Place roast fat side up in an oven safe pan. 3. Place roast in oven and cook for 20 minutes, and then reduce heat to 325 degrees F Continue cooking approximately 20 minutes per pound or until Internal temperature reaches 185 degrees F. For shredded pork, cook roast to an internal temperature of 200 degrees F. Grill/Smoker: 1. Preheat one side of grill to high (500 degrees F) 2. Place roast over direct heat and cook until grill marks are obtained on a 3. Reduce grill temperature to medium (350 degrees F). 4. Move roast to indirect heat. Cook approximately 30 minutes per pound until internal temperature reaches 200 degrees F. to help maintain juiciness, wrap rest in foil. 5. Remove from foil and grill for an additional 5 to 10 minutes to allow interior to crisp. Keep refrigerated.
