Directions

How to prepare the perfect pizza: 1000g of gluten-free flour, 800g of water, 8g of instant yeast, 20g of honey, 35g of extra virgin olive oil and 25g of salt. 1. Using a stand mixer fitted with the paddle attachment add in your Caputo gluten free flour, salt, instant yeast and honey. Mix for 30 seconds on speed 1. 2. Next add in your water and mix on speed 2 for 4-5 minutes. 3. Stop your mixer, scrape down the sides of your bowl and add in extra virgin olive oil and mix on speed 1 for 2 minutes. 4. Coat a separate bowl with extra virgin olive oil or non-stick spray. Place your dough inside, cover with plastic wrap and refrigerate for 30 minutes. 5. Once the dough has rested remove it from the refrigerator. Place a piece of plastic wrap on a scale and weigh your dough balls to 280g. Be sure to wear gloves coated in olive oil when handling the dough to ensure it doesn't stick. 6. Gently ball up your dough, rewrap it in plastic. Continue this process until all dough balls are complete. 7. Place your dough balls in the refrigerator to rest for a minimum of one hour and up to 24 hours before baking. 8. Pre heat your oven to 500F. Once it is at temperature place a baking steel, pizza stone, or sheet pan in your oven for at least 30-40 minutes at 500F to allow it to get to the appropriate temperature. This will ensure that your pizzas cook evenly on the bottom. 9. Stretch your pizza on a counter moderately dusted with rice flour, then add your favorite toppings. 10. Transfer the pizza to a pizza peel, brush the crust with extra virgin olive oil and gently shuffle the pizza onto your baking steel, pizza stone, or sheet pan. Bake for 7-9 minutes or until golden brown. 11. When the pizza is ready, we recommend serving it right away. Store in cool and dry place. The expiry date refers to the product in intact packaging correctly preserved in fresh and dry place (max temperature 75F), away from heat and light. Keep away from moisture and sudden temperature changes.
