Add: 3/4 cup oil, 3 eggs, 1 tsp vanilla extract, 1 1/4 cup shredded carrots, 1/3 cup crushed pineapple (drain very well), optional: 2/3 cup chopped walnuts. Directions: Preheat oven to 350 degrees. In large bowl, using an electric mixer, beat oil, eggs & vanilla extract. Slowly add this cake mix and blend thoroughly. Fold in carrots, pineapple, and 1 1/2 cup walnuts (optional). Pan size: 9 x 13 inches, bake time: 22-27 minutes; pan size: two 8 inches rounds, bake time: 22-27 minutes; pan size: 9 x 9 inches; bake time: 30-35 minutes. Cake: pour batter into a greased cake pan. Refer to chart above for pan size/bake time. Bake until toothpick inserted in center comes out clean. Cool completely before frosting. Sprinkle with remaining chopped walnuts (optional). Cupcakes: LINE muffin pans with baking cups (or grease muffin pans) and fill each cup 2/3 full. Bake 15-18 minutes or until toothpick inserted in center comes out clean. Makes approximately 15 cupcakes. Cool completely before frosting. Optional cream cheese frosting. 8 oz cream cheese or dairy free cream cheese (softened) 1/2 cup butter/butter substitute (softened. 3 3/4 cups powdered sugar 2 teaspoons vanilla extract. In a large bowl, with an electric mixer, beat cream cheese, butter & vanilla until fluffy. Gradually beat in powdered sugar (add 1/2 cup at time) until desired consistency is achieved. Note: add 1-2 tablespoons of milk/milk substitute if thinner frosting is desired.
