2 Easy Steps: 1. Prep: Heat at least 2 inches of vegetable oil in a deep skillet or wok. In a medium bowl, whisk together the tempura mix with 1-3/4 cups ice cold seltzer water (do not overmix). Place the bowl into a larger bowl filled with ice cubes to keep cold. 2. Coat: Dip up to 2 lbs shrimp or veggies into tempura batter, allow excess to drain, and fry at 350 degrees F - 360 degrees F for 2-4 min, until golden and cooked (145 degrees F for shrimp). Use a spider or tongs to transfer to a paper towel-lined plate. Serve with lemon wedges, soy sauce or your favorite dipping sauce. Tips: Use paper towels to pat the shrimp and vegetables completely dry before frying. Skim off bits of cooked batter from the oil between batches. Allow the oil to return to temperature and repeat with remaining ingredients.
