Directions

Endive Salad with blue cheese & pears. Ingredients: 5 tbsp rice vinegar; 1/2 cup canola or sunflower oil; 2 tbsp Dijon mustard; 1 shallot / garlic clove, finely chopped; 6 heads California endive, in 1/2 inch slices; 3-4 tbsp crumbled blue cheese; 1 ripe pear, cored and quartered; 4 tbsp chopped roasted walnuts. Instructions: Combine first 4 ingredients in a bowl and whisk until emulsified. Dress endive. Divide equally among four plates. Cut pear quarters lengthwise into thin strips. Top each plate of salad with equal amounts of cheese, walnuts, & pear. Endive Appetizer with avocado & yogurt. Ingredients: 2 medium sized avocados; 1 tbsp lime juice; 2 tbsp plain greek yogurt; 1/2 tsp ground cumin; 2 tbsp chopped fresh cilantro; 24-30 California endive leaves. Instructions: Peel, pit, and mash avocados; set aside. Combine lime juice, greek yogurt, cumin, and cilantro in a small bowl; stir in mashed avocados. Spoon avocado mixture evenly into endive leaves.
