Victoria eggplant in vinegar is made from fresh eggplant which is peeled, cut in julienne style, cooked, and marinated in a tangy vinegar marinade. For a real Italian taste treat, drain liquid and rinse with fresh water, drizzle with Victoria extra virgin olive oil, season with Victoria oregano and Victoria Basil. Let stand for 10 minutes and serve. Shoestring eggplant is a cholesterol & fat free food. A family owned business.
