Handling Instructions: Fully Baked: For extended life keep this bread in this plastic bag as this will help retain the moisture. Unsliced bread is best served slightly warmed in an oven or left out of the plastic bag for one hour to restore the crust. Never warm bread in a microwave! This will destroy the quality of the bread. Store bread in cool, dark environment such as a bread-box. Par Baked: Direct from freezer - remove frozen bread from bag and bake in the center of a preheated 450 degree oven for 10 minutes or until you have achieved a deep golden crust. Remove bread from oven and let stand 3 to 5 minutes before serving. Already Defrosted - to defrost bread before baking leave bread in plastic bag to thaw. To bake thawed loaf remove thawed bread from bag and bake in the center of a preheated 450 degree oven for 10 minutes or until you have achieved a deep golden crust. Scaletta means small ladder and the name refers to the back and forth curling of the dough that occurs when the loaf is formed and gives the bread its distinctive shape. Each loaf is hand rolled, curled, split and then slowly baked directly on the oven hearth. The result is a rich thick crust and a complex fiber-like texture. This is authentic artisan bread production that has remained essentially unchanged for over 100 years.
