Chicken Satay. Mix 1/2 cup Thai Kitchen® coconut milk, and 2 Tbsp. each Thai Kitchen® premium fish sauce and Thai Kitchen® red curry paste in glass dish. Add 1 lb, boneless skinless chicken breasts, cut into 3/4-inch strips; toss to coat well. Refrigerate at least 1 hour. Thread chicken onto skewers. Broil or grill over medium-high heat 3 minutes per side or until chicken is cooked through. Serve with Thai Kitchen® peanut satay sauce for dipping. Makes 8 appetizer servings. Use this sauce as a dip for meat, seafood or vegetables, or as a stir-fry sauce, noodle sauce or salad dressing. Refrigerate after opening. Stir well before serving.
