Directions

For six dozen snails: Drain contents and place a snail in each shell, which has been rinsed in boiling water. Cover with butter sauce (recipe below). Place the prepared snails in a hot oven (about 400 degrees F) until snail butter is bubbling. Butter Sauce Recipe: Blend 1 lb. butter, 6 to 8 finely chopped garlic cloves, 3 tbsp. finely chopped shallots, salt & pepper to taste. A dash of brandy, port or Madeira may be added. After opening, transfer product to an airtight container and store in the refrigerator.
