Ingredients You Need: 12 oz. boneless, skinless chicken, sliced. 2 Tbsp. vegetable oil. 1 cup small bite-size broccoli florets. 3/4 cup chunked red bell pepper. Directions: 1. Cook wide rice noodles in boiling water 6 minutes. Drain noodles. 2. Meanwhile, stir-fry chicken in hot oil in nonstick skillet over medium-high heat for 2 minutes. Add broccoli; stir-fry 2 minutes. Add bell pepper; stir-fry 1 minute longer, or until chicken is fully cooked. 3. Reduce heat; add sauce. Cook and stir until sauce is heated. 4. Serve over hot cooked noodles.
