My Giant Fresh Meal Kit Pan Seared Chicken Breast



Prep time: 10 minutes. Cook time: 25-28 minutes. Ready in: 35 minutes. Prep: 1. Rice - prepare according to package instructions. 2. Preheat oven to 375 degrees F. 3. Thoroughly wash whole produce. 4. Garlic - finely chop. 5. Mushrooms - remove the stem and cut into 1/4 inch slices. Cooking instructions: Chicken: 1. Heat frying pan on medium-high heat. Pat chicken dry with a paper towel and season each side with salt and pepper. 2. Heat 1 tablespoon of olive oil in pan and add chicken. Cook about 4 minutes on each side or until golden brown and heated to an internal temperature of 165 degrees F. While chicken is cooking, start preparing the green beans and garlic. 3. When cooked, place chicken onto a plate and cover with foil. Green beans and garlic: 1. Place green beans and garlic on a foiled lined sheet tray and top with 2 tablespoons of olive oil. Season with salt and pepper to taste. Toss, mix evenly, and spread into a single layer. 2. Roast in oven for about 15-20 minutes or until green bean are lightly browned and softened. While beans are cooking, finish cooking chicken and start the sauce. Sauce: 1. Return the pan used to cook chicken to the stove and add 2 teaspoons of olive oil. Add onions and saute until translucent and starting to soften & brown, about 2-3 minutes. 2. Add mushrooms and saute until softened and lightly browned, about 6 minutes. 3. Add roasted chicken demi-glace to pan and stir to combine. 4. Simmer and reduce the sauce for about 3-4 minutes on medium-high heat or until sauce thickens enough to coat the back of a spoon. Reduce heat to medium. 5. Stir in sour cream. Season with salt and pepper, if desired. 6. Add chicken breasts and any juices from resting back to pan to reheat, coating chicken with sauce, about 2 minutes. Serve: Place chicken on serving plates and top with mushroom sauce.
