Pressure Cook: Chicken Burrito Bowl Active Time: 9 min. Release: Quick. Total Time: 16 min. (plus 15 min. to bring Instant Pot® to pressure). What We Provide: • Tortilla chips • Four-cheese Mexican style blend • Quinoa • Foil pan • Uncooked diced chicken breast • Black bean salsa What You Need: • 1 cup and 1/3 cup water • Aluminum foil • Instant Pot® (6 or 8 qt.) or other programmable electric pressure cooker • Instant Pot® Trivet • Instant-read food thermometer • Long wooden spoon or silicone spatula Cooking Instructions 1. Remove tortilla chips and four-cheese Mexican style blend pouches from bag. Let both pouches stand at room temperature until ready to use. Empty quinoa pouch into foil pan. Add 1 cup water to foil pan; cover with aluminum foil. Let stand 10 min. 2. Meanwhile, break up chicken pieces in pouch to separate pieces. Empty pouch into Instant Pot®; spread to evenly cover bottom of pot. Add 1/3 cup water. Remove contents of salsa from container and place over chicken. Top with trivet. (Note: Trivet should be flat. Do not unfold legs before placing trivet in pot.) 3. Place foil pan on trivet. Close and lock lid. Turn pressure release valve to sealing position. Cook 7 min. using manual/high pressure cook setting. Press cancel when timer goes off, then use quick pressure release to release steam. Caution: Never put your hands or face over the steam release valve when releasing steam. 4. Remove lid. Liner of Instant Pot®, foil pan and trivet will all be hot so use oven mitts to remove foil pan and trivet from pot; set aside. Use instant-read thermometer to check that chicken is done (165°F).* 5. Stir chicken mixture. Serve over quinoa. Crush tortilla chips; sprinkle over chicken mixture along with the cheese. Important Note: If you get a burn warning on the display, don't panic. Cancel the program, then do a quick release to release steam. Stir chicken mixture. Add about 1/4 cup water to pot; cover with lid and continue cooking using the manual/high pressure cook setting as directed. *Temperature of chicken should register 165°F when tip of thermometer is inserted into thickest part of each chicken piece. If chicken is not done, cook chicken mixture additional 1 to 2 min. using sauté setting until chicken is done, stirring frequently. Keep frozen & see cooking instructions cook thoroughly.
