Prep time: 10 minutes. Cook time: 25 minutes. Ready in: 35 minutes. Prep: 1. Preheat oven to 375 degrees F. 2. Thoroughly wash whole produce. 3. Red bell pepper- Remove stem and seeds. Dice into 1/2 inch chunks. 4. Zucchini - Chop off ends and discard. Slice lengthwise in half and then into 1/2 inch moons. 5. Cilantro - Pick leaves off stem, discard stem and roughly chop. Cooking instructions: Meatloaf: 1. In mixing bowl, combine ground beef, 1/2 of the diced yellow onions Italian bread crumbs, 1- 1/2 tablespoons of the diced tomatoes, and pinch of salt and pepper. 2. Divide mixture in half and form into a loaf, about 4x2 inches. 3. Rub 1/2 teaspoon of olive oil on a foiled lined sheet tray (or spray with cooking spray) and place mini loaves on top. Wash your hands after handling raw meat. 4. Bake for 25 minutes or until cooked to an internal temperature of 165 degrees F. Couscous: 1. Prepare couscous according to directions on package. Sauce (prepare while meatloaf is cooking): 1. Heat 2 tablespoons of olive oil in frying pan over medium-high heat. Add the rest of the chopped yellow onion and saute until starting to brown and soften, about 2-3 minutes. 2. Add carrots and bell peppers, and saute for an additional 5 minutes. 3. Add zucchini and saute for an additional 5 minutes or until softened. 4. Stir in remaining canned tomatoes and sriracha (if you want a mild meatloaf for kids, don't add the sriracha. 5. Turn heat to medium and simmer sauce until slightly thickened, about an additional 5 minutes. 6. Stir in cilantro. Serve: Serve mini-meatloaves, veggies and couscous. Enjoy!
