You Will Need - 1 lb boneless, skinless Chicken Breasts cut in 1-inch cubes. 1 medium Sweet Potato cut in 1/2-inch cubes (about 3 cups) (Red potatoes (about 3 cups of 1/2-inch cubes) can be substituted for sweet potato). 1 medium Green Bell Pepper cut in 1/2-inch pieces 3 tablespoons vegetable oil. Cooks in 35 min: 1. Heat oven to 400°F. 2. Place chicken and vegetable pieces in large bowl; drizzle with oil. Sprinkle with seasoning; stir well to coat. 3. Arrange pieces in single layer on sheet pan with sides (For easy clean up, line sheet pan with aluminum foil or parchment paper). Bake 35 minutes, or until chicken pieces are thoroughly cooked (Over 165 degrees F). 4. Top with Green Chile Drizzle as desired. For food safety and quality, follow the cooking directions. Refrigerate leftovers.
