Prep time: 10 minutes/cook time: 25 minutes/ready in: 35 minutes. Prep: 1. Preheat oven to 375 degrees F. 2. Thoroughly wash whole produce. 3. Potatoes - cut in half lengthwise and then cut each half into 3 wedges. 4. Rosemary - pull leaves off stem (discard stem) and roughly chop leaves. 5. Red bell pepper - remove stem and seeds (discard). Dice remaining pepper into 1 inch chunks. 6. Zucchini - slice in half lengthwise and then into 1/4" half-moon slices. 7. Parmesan and panko - on a plate, mix parmesan cheese & panko crumbs and add black pepper to taste. Cooking instructions: Chicken: 1. Pat chicken dry with a paper towel and coat both sides with 1 1/2 tablespoons olive oil. 2. Add chicken to panko-parmesan mix and coat evenly. 3. Place chicken on lightly oiled sheet tray and bake for 15-20 minutes or until golden brown and heated to an internal temperature of 165 degrees F. Potato wedges: 1. Toss potatoes and rosemary with 2 tablespoons olive oil, and a pinch of salt & pepper to taste. 2. Spread mixture in a single layer on sheet tray. 3. Roast in oven for about 15-20 minutes or until golden browned and fully cooked. Ratatouille: 1. Heat 1 1/2 tablespoons olive oil in frying pan over medium heat. 2. Saute red onion until soft. 3. Add red bell pepper and zucchini and saute an additional 5-8 minutes or until vegetables are soft and golden. 4. Add canned tomatoes and stir to combine. Bring sauce to a simmer (light boil) for about 5-6 minutes or until vegetables are tender and sauce is slightly thickened. Season to taste with salt and pepper. Serve: Plate chicken, potato wedges and ratatouille. Enjoy!
