Vanilla Whipped Cream: Beat 1 cup heavy cream with 1/4 cup confectioners' sugar and 1 tsp. Extract in medium bowl with electric mixer on high speed until stiff peaks form. Makes about 2 cups. Add a splash to fresh berries, peaches or mango to bring out natural flavor. Stir into cake batters and custards to build depth. Use to deepen and round out chocolate desserts like ganache, mousse and tartes. Stir into fillings for pies, crisps and cobblers to add warmth and depth.
