Peapod Meal Kit: Chicken Tortilla Soup by Zen of Slow Cooking

1) Heat the oil in a skillet; saute the onion and pepper on medium heat for 2 minutes until slightly wilted. Transfer onion mixture to slow cooker. Tip: As a simple alternative to sauteing, put olive oil, onion and pepper in a glass bowl and microwave for 1 minute. 2) Rub the Southwestern Fiesta Slow Cooker Spice Blend onto the chicken breast. Place chicken on top of the onion and pepper mixture in slow cooker. Tip: Put your chicken in a gallon size resealable bag, add the spices, seal the bag and shake to coat the chicken. 3) Add the black beans, tomatoes, tomato paste, chicken broth and chipotle chili (if using). Stir, cover and cook on LOW 6 Hours or HIGH 3 Hours. 4) Shred the chicken breast in the slow cooker using two forks. Ladle into bowls and top with tortilla strips, cilantro and sour cream. Hands On: 15 Minutes. Cook Time: 3 or 6 Hours. Makes: 4 - 6 Servings.
