Ahold Lemon and Thyme Chicken Meal Kit


 

Directions

Tools Needed: 1 Cutting Board. 1 Chef Knife. 1 Pair of Tongs. 1 Spoon. 1 Medium Size Frying Pan. 1 Medium Sized Sauce Pan. Prep: 1. Thoroughly wash and dry whole produce. 2. Zucchini - Slice in half lengthwise and then into 1/4" half-moon slices. 3. Chicken Thighs - Pat dry with a paper towel and season with salt and black pepper. 4. Lemon - Cut in half widthwise, then cut each half into quarters. Cooking Instructions: 1. Heat a frying pan over medium-high heat. Heat 1/4 cup of olive oil in pan and add the chicken thighs. Cook about 3 minutes on both sides or until golden brown. 2. Once the chicken thighs are golden brown, add the whole thyme sprig and chicken stock to the pan. Bring everything to a boil. 3. Turn down the heat to low and simmer, covered, for 15 minutes. 4. Remove the lid, add the lemon, zucchini, and tomatoes to the pan. Cook for an additional 10 minutes or until the internal temperature of the chicken reaches 165* F. 5. While the chicken and vegetables are cooking, add the bag of rice and 1 quart of water to a medium saucepan. Bring to a boil and cook uncovered for 10 minutes. 6. Using a pair of tongs, remove the bag of rice from the water and allow to drain. 7. Cut open the bag and pour the hot rice into a serving dish. Season as desired. 8. Plate and serve.
