Swamp Fire Seafood Boil

Directions

In any size pot, using no swamp fire, put 4 inches of water. Cover pot and oring to boil. Add seafood, returning lid tightly, and begin timing when steam begins to escape. Steam crabs or crawfish 10-12 minutes, and shrimp 8-10 minutes. When steaming time is completed, using a styrofoam chest, put in a thin layer of seafood, then sprinkle a moderate amount of swamp fire. Continue to layer in this manner until chest is full. Cover chest tightly and let stand for 12 minutes. Seafood will remain hot for 5 hours. Caution: Only use styrofoam chests, as plastic or other types will warp. Boiling Instructions: 1 Sak Pak (Combined with approximately 9 gallons of water: Crabs: 1 bushel quantity; 5 min. boil time; 15-20 min. soak time. Boiling Instructions: 1 Sak Pak (Combined with approximately 9 gallons of water: Crawfish: 1 sak quantity; 5-7 min. boil time; 15-20 min. soak time. Boiling Instructions: 1 Sak Pak (Combined with approximately 9 gallons of water: Shrimp: 50 lbs. bushel quantity; 1-3 min. boil time; 10-15 min. soak time. For boiling smaller quantities add 1 cup of swamp fire to each gallon of water. Addition of 1/2 cup of margarine or cooking oil during boiling will make peeling easier. Extra spicy: sprinkle swamp fire on seafood after removing from liquid. Note: For 2nd boiling add 2 cups swamp fire.
