Skyr, that's elastic Icelandic for thick yogurt! Skyr is the name for thick yogurt in Icelandic. It is made with simple ingredients and is high in protein. None of our products contain any of those dreadful artificial sweeteners. We only use milk from farmers who do not use growth hormones like rBST. Our skyr is great on its own or mixed with fruit and granola. It is an excellent ingredient for cooking and baking. Also, its thickness makes it perfect for creating rather delicious smoothies. I hope you enjoy, - Siggi. Why make your own yogurt? I get this question from time to time. The main reason is that the yogurt I found on shelves is too sweet. I wanted subtle flavor and less sugar. I also really missed the thickness of skyr, the yogurt from my home, Iceland, where skyr is as traditional as apple pie is in the States. I was mad about skyr growing up. So, I started making my own. After some gruesome trial and error, it started to taste rather delicious. We work with nice farmers: We source our milk from family farms in New York State and Wisconsin where the cows are not injected with any kind of hormones. Further, we do not use any artificial preservatives, colorings, or thickeners. Quite a bit of protein: Skyr has been a staple of the Icelandic diet for more than 1,000 years. It is a strained yogurt made from cow's milk. Traditionally, skyr is made from the skim milk after the cream has been floated off to make butter. Like milk, regular yogurt is mostly water, but with skyr, that water is strained away. In other words, one cup of siggi's skyr requires four times more milk than a regular cup of yogurt. What remains is a protein-rich yogurt with live active cultures. Not so much sugar: Our plain skyr has no added sugar, and our flavored varieties are lightly sweetened with organic agave nectar or cane sugar. I would also like to add that we do not use any artificial sweeteners like aspartame; I shudder at the mere thought. An excellent cooking ingredient: Skyr can be used instead of cream as a base for a dip and it is a great substitute for sour cream in baking. Delicious in fruit smoothies, making them thick and protein rich. Lastly, a very simple great dessert is skyr with walnuts and honey or agave nectar. Live Active Cultures: S.
