Measuring and Storing Flour: Spoon flour into a measuring cup and level off with a knife. No sifting necessary. Store flour in an airtight canister in a cool, dry place. For longer storage, place in a resealable plastic freezer bag and refrigerate or freeze. Bring to room temperature before using. Substituting Flour: Whole wheat flour can be incorporated into all-purpose flour recipes. We suggest starting at 25% and then working your way up to 50% of the total flour required in the recipe as you become more comfortable.
