Express cooking, Double cooking Express cooking 50 Serving (100 oz.) Water needed, 6.25 gallons 80 Serving (160 oz.) Water needed, 10 gallons 100 Serving (200 oz.) Water needed, 12.5 gallons. 1/4 Pound (4 oz) pasta 4 cup Water. 1 Teaspoon salt (if desired). Add Salt to boiling water. Add pasta, stirring occasionally. To achieve the best results, drain pasta a minute earlier that the recommended cooking time as printed on the bag and finish the cooking process by tossing the pasta and sauce in a saute pan.(1 2 3) Double cooking 1/4 Pound (4 oz) Pasta . 4 Cups water. 1 Teaspoon salt (if desired) Add salt to boiling water. Add pasta, stirring occasionally. Cook the pasta in boiling water following the recommended per- cooking time as printed on the bag. Drain the pasta and drizzle some olive oil over it. Cool the pasta sown using a blast chiller. Store it (0-3 degrees Or 32-37 degrees) on a steel tray and cover it. Alternately, place the drained pasta on a sheet tray and drizzle with a little bit of olive oil, cool to room temperature or place tray in walk in cooler until chilled. After the pasta is chilled, store it in plastic container with a lid or sealed plastic bag for a maximum of 48 hours. Before service, boil the pasta a second time for 40-60 seconds, drain the pasta and serve with your favorite sauce.
