Directions
Cleaning and Care: Handwash only. Do not immerse in water or put in dishwasher. Cooking Tip: The best homemade candy is a result of three vital components, your ingredients, your timing and of course, the equipment. Generally sugar, and in some cases chocolate, will be that essential ingredient. But to ensure that either of these ingredients result in the textures and flavors you want, a thermometer is just as important. With a little patience and a thermometer with the six temperature zones, (thread, soft ball, firm ball, hard ball, soft crack, hard crack) will lead to delicious results and a recipe that will be able to be repeated time after time. Temperatures and Test for Candy: Test: Thread; Product: Syrup; Degrees F: 230 degrees; Degrees C: 110 degrees. Test: Soft ball; Product: Fudge; Degrees F: 235 degrees; Degrees C: 112 degrees. Test: Firm ball; Product: Caramels; Degrees F: 245 degrees; Degrees C: 118 degrees. Test: Hard ball; Product: Marshmallows; Degrees F: 250 degrees; Degrees C: 121 degrees. Test: Soft crack; Product: Popcorn balls, Butterscotch; Degrees F: 270 degrees; Degrees C: 132 degrees. Test: Hard crack; Product: Taffies, Brittle; Degrees F: 300 degrees; Degrees C: 149 degrees. For accurate readings, make sure the thermometer stem tip does not touch the bottom of the pan. Adjust the pan clip to the correct positioning by squeezing the top and bottom together to loosen the connection and slide to the desired position. Squeeze. Clip positioning.
