Cook time: 20 minutes. Serves: 4. 1. In a large nonstick skillet, heat 2 teaspoons olive oil over medium-high heat. Add peppers and onion and cook for 2-3 minutes, or until vegetables just begin to soften. Stir in sugar snap peas; cook 1 minute more. Add 2 tablespoons more olive oil, 1 tablespoon soy sauce and Uncle Ben's® Ready Rice® Jasmine. Cook and stir over medium high heat for 2-3 minutes, or until rice is heated through and begins to fry on the bottom of pan. Tip: Be sure to scrape the bottom of the pan to keep rice from sticking. 2. Make a space in the center of the rice and crack an egg into the space, stirring quickly to scramble the egg. Once egg is mostly cooked, stir to combine with rice. Divide fried rice among shallow bowls or plates, set aside, and keep warm. 3. Wipe the pan, pat the chicken dry, and season with salt and pepper, if desired. Heat 2 teaspoons of olive oil over medium-high heat until hot. Add chicken and cook for 6-8 minutes, or until golden brown. Reduce heat to medium, turn chicken and cook for 3-4 minutes more, until cooked through. Carefully drain any excess oil from the pan without discarding any browned bits. Tip: To add depth of flavor to your sauce, retain the browned bits (also known as "fond") in the pan while you make the sauce. 4. While chicken is cooking, combine honey, 2 tablespoons soy sauce, 1/3 cup water, and as much Gochujang sauce asn you like in a small bowl. Add the sauce to the skillet and cook, stirring constantly over medium heat for 1-2 minutes, turning the chicken to coat while the sauce thickens. Portion the chicken into four servings and place on top of the fried rice and drizzle with sauce. Garnish with sesame seeds and scallions. Tip: Gochujang is an authentic red chili paste. If you prefer a spicier dish, use it all. For a less spicy flavor, add only 1 teaspoon.
