Prep time: 30 minutes. Cook time: 20 minutes. Serves: 4. 1. Place pork and garlic in large zip-top bag; pour in marinade. Can be refrigerated for up to 60 minutes if desired. 2. Preheat oven to 450°F. Line baking sheet with parchment paper. Seed poblano peppers and cut into 1/2-inch pieces. Toss peppers and pineapple with 1 tablespoon oil and place in an even layer on baking sheet. Bake 15 minutes until lightly charred. Combine peppers, pineapple, onion and cilantro in medium bowl. Serve with guacamole and tortilla chips. To make guacamole, coarsely mash 2 ripe avocados in a bowl, add Frontera® Original Guacamole Mix, stir and add salt to taste. 3. Meanwhile, heat remaining 1 tablespoon oil in large non-stick skillet over medium-high heat. Add half of pork to skillet, leaving extra marinade in bag. Cook stirring occasionally until golden and cooked through, about 3 minutes. Transfer to a clean bowl. Add remaining pork to skillet, leaving extra marinade in bag. Cook, stirring occasionally until golden and cooked through. 4. Divide pork evenly between tortillas; top each with peppers, pineapple, onion and cilantro. Serve with guacamole and tortilla chips.
