Directions

Cook Time: 35 Minutes. Serves: 2. To make the chimichurri sauce: Chop parsley leaves and mince garlic. Combine parsley, garlic, vinegar, sriracha sauce, 1 tablespoon olive oil and juice of half a lime. Blend and season to taste. Set aside. To make the salsa: Slice the grape tomatoes. Combine tomatoes, corn & black beans, and onions. Season to taste. Set aside. Heat medium sauté pan on medium high heat. Season both sides of steak with salt & pepper. Add 1 tablespoon olive oil to pan & cook 4-6 minutes on both sides until desired doneness is reached. Squeeze remaining lime half onto steak and allow to rest. Slice in thin slices on the bias. Place tortilla on a microwave safe plate and cover with damp paper towel. Microwave in 30 second increments until warmed through. To serve, place steak, salsa & chimichurri sauce in tortillas as desired.
