Cook Time: 35 Minutes. Serves: 2. Preheat oven to 375°F. Combine apricot preserves and grain mustard in a small bowl and mix thoroughly. Rinse the sweet potatoes and set them aside. Rinse & dry the pork tenderloin. Place on a sheet pan and coat evenly with 2/3 of the mustard glaze. Place carrots on pan with pork and season with 1 tablespoon olive oil, salt & pepper as desired. Roast for 20-25 minutes until cooked to an internal temperature of 165°F. Let rest. While the pork is cooking, prick the sweet potato all over with a fork. Wrap sweet potatoes with microwaveable plastic wrap or waxed paper and microwave on high for approximately 8 minutes or until thoroughly cooked. Slice the pork evenly and top with remaining mustard glaze. Serve with carrots and sweet potatoes.
