Wildfire Meal Kit: BBQ Bison Meatloaf, Mashed Potato, Caramelized Carrots


 

Directions

Prep time: 5 minutes. Cook time: 45 min (including resting the meat). Serves: 4. Step 1: Preheat oven to 350°F. Cut off the crust of the brioche and soak crustless slices in milk, then mash with a fork and set aside. In a medium size saute pan, melt 2 tablespoons of butter and sizzle 1 teaspoon garlic over medium-high heat for 1 minute. Add shredded carrots, zucchini, and onions and saute for 5 minutes. Set aside to cool. Step 2: Combine ground bison, mashed brioche, cooked caramelized vegetables, eggs, grated parmesan cheese, 2 tablespoons of BBQ sauce, rosemary, 1 1/2 teaspoons salt and pepper blend and mix together well. Step 3: On a parchment-lined sheetpan, shape mixture into a rectangular loaf, place on half of the sheet pan and bake for 15 minutes. To prepare the mashed potatoes, remove lid, cover with foil, and place in oven for 15 minutes. Remove foil and stir well; cover again and heat for an additional 15 minutes. Step 4: In a medium sized hot saute pan, add 1 tablespoon extra virgin olive oil and 1 tablespoon and carrot batons and caramelize for 2-3 minutes. Add 1 teaspoon salt and pepper blend, and 1 tablespoon pure maple syrup and cook another 2 minutes. After meatloaf has cooked 15 minutes, remove from oven and place sauteed carrots on the other half of the sheet pan. Cover meatloaf with remaining BBQ sauce. Bake both meatloaf and carrots for 20 more minutes until meatloaf internal temperature reaches 165°F. Let rest for 15-20 minutes before slicing. Slice meatloaf into 8 equal slices. On a large platter, arrange meatloaf with overlapping slices, spoon mashed potatoes and caramelized carrots on the plate.
