Use with gas grills or electric smokers. On a gas grill, fill a reusable smoker tray or a foil pouch with two to three handfuls of wood chips. Place the tray or pouch directly over the hottest burner until it begins to smoke. Using tongs, move it to one side to make room for the food. The chips will smoke for approximately 20 to 30 minutes. Be sure to have a second pouch or smoker tray ready when cooking for longer periods of time. See the manufacturer's instructions for use with electric smokers. Tips and Techniques: To accelerate the smoking process on your gas grill, use only dry chips and turn the temperature to high when you first place your pouch or tray on the cooking grid. Within a few minutes, the chips will begin to smoke. At that point, turn the temperature to your desired cooking level. If the chips flame up on your gas grill, use a spray bottle of water to douse the flames. This tip does not pertain to electric smokers. Wood chips can also be used on charcoal grills as described for gas grills. However, wood chunks work better with charcoal than chips.

How to Use Western Premium Hickory Wood Chips for Smoking You can use Western’s Premium Hickory Wood Chips to smoke meats in a variety of ways. They can be used in a charcoal, gas, or electric grill. If you’re using wood chips for smoking your meats on a gas or charcoal grill, place dry wood chips in a foil pouch or a smoker box and place them over the heat. Let the hickory chips start smoking, then move them to one side of your grill. Place your meat on the grill and close the lid. Cook to time or temperature you normally would, keeping the lid closed as much as possible. The chips will smoke for 20 to 30 minutes. If you need to cook your meat for a longer period of time, have an extra smoker box or pouch of wood chips ready to go. When using a charcoal grill or small to medium smoker, we recommend using our Western peach wood chunks instead of chips to get a longer smoking time and better smoking results. If you wish to use our wood chips for smoking in a charcoal grill, load your grill with lump charcoal. Light the charcoal using your preferred method; however, we would recommend you avoid using lighter fluid, so your meat retains the natural hickory smoke flavor.
