Heating in a microwave oven is highly recommended just before serving. Yield: Size of serving (reconstituted) - number of serving per 56 oz can. 2 oz (#16 scoop) - 85-90. 3 oz - 60-65. 4 oz (#8 scoop) - 42-45. Place contents of 1 can instant mashed yams in a suitable large bowl. Add 1 can of boiling water. Stir slightly for complete mixing of dry product with boiling water. Allow to stand for 8-10 minutes for rehydration. After standing, mix with whip or portable mixer at a low speed. Instant mashed yams are now ready for serving or further use in other recipes.
